Makes about 25 Canapés

Ingredients:

• 1/2 pound of pitted mixed olives

• 2 anchovy fillets, rinsed

• 2 small cloves of garlic, minced

• 2 tablespoons of capers

• 2 to 3 fresh basil leaves

• 1 tablespoon of freshly squeezed lemon juice

• 2 tablespoons of extra-virgin olive oil

Instructions:

1. Start by thoroughly rinsing the olives under cool running water to remove any excess brine.

2. In a food processor, combine the olives, rinsed anchovy fillets, minced garlic, capers, fresh basil leaves, and freshly squeezed lemon juice.

3. Drizzle the olive oil over the ingredients and pulse the mixture in the food processor. Stop occasionally to scrape down the sides of the bowl, ensuring everything is well incorporated.

4. Continue processing until you achieve a coarse paste, which should take about 1 to 2 minutes in total.

5. Once done, transfer the olive mixture to a serving bowl. It’s now ready to be enjoyed as a flavorful spread on toasted baguette slices or your favorite crackers.
