Courgettes Farcie -Zucchini stuffed with ground beef
A Summer staple in France, this flavorful, yet light dish is something you'll want to add to your rotation. Serve with rice or potatoes.

Yield: 4 servings
Ingredients:
2 lbs ground beef
4 zucchinis, washed and cut in half lengthwise
1 shallots, diced
1/4 lb gruyere cheese, grated
4 Tbsp Olive Oil, divided
1 Tbsp Worcestershire sauce
1 Tbsp smoked paprika
2 tsp crushed red pepper
4 cloves of garlic (fresh or frozen)
1 tsp fennel seed
1 tsp herbes de Provence
2 tsp salt
2 tsp salt divided
1 tsp ground black pepper
Directions:
Preheat oven to 392 degrees.
Rinse zucchini and slice in half lengthwise. Scoop out the inside of the zucchini halves and reserve in a bowl for later.
Set emptied zucchini halves in a oiled pan (2 Tbsp) side-by-side
Mix ground beef in bowl with 1 tsp salt, smoked paprika, herbes de provence, crushed red pepper, and fennel seeds.
Heat 2 Tbsps of olive oil over medium heat in large skillet. Add diced shallots and the insides of the zucchini and sauté until tender. Add some salt and pepper to taste.
Add in the ground beef mixture, stir until browned and add garlic.
Scoop mixture into each zucchini half.
Put in oven and bake for 30 minutes. Remove from oven and sprinkle the grated cheese evenly across each zucchini half. Put back into the oven and bake for 10 more minutes.
