Creamy French Vinaigrette

Ingredients:

• 1 fat clove garlic

• 2 tbsp honey vinegar

• 2 generous pinches fleur de sel de Camargue

• Persillade Provençale

• 1/2 tsp cardamom mustard (or Dijon mustard)

• 1-3 tsp crème fraîche

• 1/4 cup diced shallots

• Olive oil (best quality, such as Les Beaux ou Nyons Extra Vierge, Extraite au Froid)

Instructions:

1. Smash the garlic with the side of a broad kitchen knife.

2. Remove the skin and the little “germ” in the center attached to the stem.

3. Put the garlic in a wooden salad bowl and mash it with a pestle, coating the bottom of the bowl.

4. Add the vinegar into the bowl.

5. Throw in the salt and let it melt.

6. Throw in the persillade and add the mustard and crème fraîche, along with the diced shallots.

7. Add the olive oil in a thin stream, whisking as you pour, adjusting as needed for taste and consistency.

Enjoy drizzled over Butter or Boston Lettuce for an authentic French experience!
