French Crêpes

Yields: 30 Crêpes (give or take, based on how thick / thin they are)
Ingredients:
3 1/3 Cups Flour
4 1/4 Cups Milk
8 Tbsp salted butter, melted (but not hot)
6 eggs
1 Tbsp Granulated Sugar
1 Tbsp Vanilla Sugar
A pinch of salt
Directions:
Combine all the dry ingredients in a bowl. Create a small well in the center and crack the eggs into it. Gently whisk the eggs, gradually incorporating the flour from the edges of the well. Pour all milk and melted butter into mixture and continue whisking until the mixture is smooth and free of lumps.
Once the batter is blended, heat your crêpe pan over medium-high heat until hot. Lightly coat the pan with oil using a paper towel. Pour a ladle of batter into the pan, and quickly swirl the pan with your wrist to evenly spread the batter. Return the pan to the heat and cook until the edges start to lift and the underside is golden brown, about 2-3 minutes. Flip the crêpe and cook for another 30 seconds to 1 minute, until lightly golden. Transfer to a plate and repeat with the remaining batter.
Continue stacking your crêpes on to your platter until all batter is gone.
Enjoy your crêpes with ham and cheese, nutella and apricot jam, or lemon and powered sugar (or anything you like)!
