Galette des Rois (Cake of Kings)

Galette des Rois, or French King Cake, is a timeless tradition celebrated during Epiphany in France. This exquisite pastry combines layers of golden, flaky puff pastry with a rich almond cream filling known as frangipane. Hidden inside is a tiny trinket or ‘fève’—often a figurine or charm—making each bite a delightful surprise. Whoever finds the fève is crowned king or queen for the day! 👑

Ingredients:

• 2 sheets puff pastry

• 7 Tbsp butter

• 1 cup granulated sugar

• 3 eggs (divided)

• 1 Tbsp flour

• 1 cup Almond Flour

• 1/2 tsp rum

• 1/4 cup powdered sugar

• a paper crown

Instructions:

1. Prepare the frangipane:

• Mix the sugar and butter together with a hand mixer

• Add in 2 eggs, flour and rum and continue to mix until blended

• Add in the almond flour bit by bit and mix until incorporated well

• Cover with plastic wrap and place in refrigerator for about 30 minutes

2. Prepare the puff pastry:

• Set your frozen puff pastry out and allow to thaw for about 30 minutes

• Roll pastry to achieve the size of rounds you plan to use (we use a large bowl to guide us)

• Place the bowl upside down on the pastry and cut around the edges (discard the cut pieces)

3. Assemble your galette:

• Preheat over to 390 F and retrieve the frangipane from the refrigerator

• Use a bit of non-stick spray and a sprinkle of flour on your baking sheet

• Place the bottom round of your pastry onto your baking sheet

• Stir the frangipane and then scoop onto the bottom pastry round. Spread evenly, leaving an inch or two around the edges to seal the top pastry to.

• Hide your food safe fève (bean) or ceramic / porcelain charm inside the spread frangipane

• Spread some egg wash around the edges of your bottom pastry round

• Lay your top pastry round over the top and press down and crimp the edges together so no frangipane leaks out while cooking

• Spread a thin layer of egg wash all over the top of the surface of the Galette

• If you'd like, with a sharp knife, gently cut any designs across the top of the Galette

4. Bake your Galette:

• Place galette into a preheated oven at 390 F

• Bake for 25 minutes, remove galette and turn up oven to 400 F

• Sprinkle powdered sugar all over the top of the galette

• Return galette to 400 F oven for 5 to 10 minutes, or until the powdered sugar melts into a glaze.

• Remove from oven and let cool for 5 minutes

• Slice and enjoy. Be careful not to chew too hard until someone finds the Fève and is crowned King!
