Pomme Frites topped with sauteed Sliced Onions and Jalapenos
Homemade golden french fries topped with sauteed red onions and jalepenos. Amazing served with our homemade jalapeno ranch dressing!
RECIPE
Yield: 6 servings
Ingredients:
3 lbs golden potatoes, peeled and cut into sticks
Peanut oil for frying
2 Tbsp Olive Oil
1 red onion, sliced
1 jalepeno, sliced
Salt to taste
Directions:
Peel potatoes and slice them into 1/4" sticks.
Put the sliced potato sticks into a bowl of cold water and let them rest there for about 15 minutes to draw out some of the starch. Drain the water from the potatoes.
Lay out a kitchen towel on the counter, spread the sliced potatoes on the towel, and make sure you pat them dry with another kitchen towel very thoroughly to remove all water before frying.
Preheat your frying oil to 325 degrees and use a large pot, never filling your oil over the halfway mark of the pan.
While the frying oil is preheating, go ahead and work on your sautéed topping of onions and jalepenos.
Put olive oil in large skillet and heat over medium heat. Add the sliced onions and sliced jalepenos until tender and remove from stovetop when they start to carmelize.
Once your frying oil reaches 325 degrees, add a batch of sliced potatoes and let them cook for 5 minutes. Remove that batch from the oil and place them in a dish lined with paper towels to soak up the excess grease. Continue with more batches until you've finished with all of your potatoes.
After the fries have sat for about 5 minutes, increase the temperature of your oil to 375 degrees.
Once the oil reaches 375 degrees, you'll cook your fries again in batches for 3 minutes to give them the final crisping and browning.
Place the cooked fries in a paper towel lined dish and immediately sprinkle with salt so that the salt sticks to the hot fries.
Spread your topping of sauteed onions and jalepenos across the top of your fries.
Serve immediately and enjoy with ranch dressing!
