Ingredients:
8 cups of Flour (11.5 protein)
2 tsp fine salt
3/4 tsp Active Dry Yeast
3 cups room temperature, filtered water
Butter, to taste
Directions:
Preparing the dough:
Add the flour into a large bowl, with a wooden spoon handle, stir in the salt, stir in the yeast, stir in the water and continue stirring with the spoon handle until a ball forms, sticking to your spoon handle. Scrape the dough off the spoon handle and cover bowl with a lid or saran wrap and leave to rise for 5 to 10 hours.
Preparing and baking the Baguettes:
Preheat oven to 485 degrees Fahrenheit.
Once the dough has risen to the top of the bowl, and after a minimum of 5 hours, remove the lid, flour your bench surface generously, then scrape the dough out onto the bench very gently as to not disturb the gas within the dough.
Gently form the dough into an elongated shape with your dough scraper. Sprinkle quite a bit of flour on top of the dough, then cut into 4 equal pieces. With your hands, pick up each piece of dough, roll a bit in the flour on the bench, and stretch to create the shape of a baguette as you place them onto a cooking sheet or rack covered with parchment paper.
With a very sharp knife, score each baguette a few times at a diagonal angle.
Place rack or pan of baguettes into your preheated oven, throw a handful of ice cubes into the bottom of the oven, then bake for 25 minutes or until a golden brown color.
