Tomates Farcie (Stuffed Tomatoes): A Taste of Provence in Every Bite

Indulge in the flavors of Provence with our delightful Tomates Farcie. This classic French dish features ripe, juicy tomatoes filled with a savory blend of seasoned ground meat, herbs, and aromatic ingredients, all baked to perfection. Serve with white rice, a French baguette and a glass of Rosé for an authentic Provençal experience.

Yield: 6 servings

Ingredients:

2 lbs ground pork (we use breakfast sausage)

10 to 12 medium sized tomatoes (use a mix for more variety)

1 cup of chopped parsley

2 shallots, diced

2 cloves of garlic sliced or crushed

3 tsp salt divided

2 tsp Herbes de Provence

1 tsp fennel seeds

1 tsp crushed red pepper

1 tsp ground black pepper

Directions:

Preheat oven to 400 degrees.

Preparing the tomatoes:

Leave the stem on your tomatoes - slice off the "hat" of each one and reserve them for later.

Scoop out the inside of each tomato and reserve the heart and juices in a bowl. Sprinkle a bit of salt in each tomato and turn them. upside down for about 15 minutes to help drain out the excess water.

Preparing the farce or stuffing:

Add the parsley, 2 tsps of the salt, and the rest of the spices in with the ground pork. Blend well with your hands.

Form balls about the size that will fit inside each tomato.

Bringing it all together:

Pour the tomato hearts and juice into a casserole dish.

Stuff the meatballs into each tomato cavity and place a "hat" back on top. Set each stuffed tomato into the casserole dish, nestling them down into the juice.

Bake in the oven for about 45 minutes or until the inside of your pork reaches a temperature of 165 degrees.

Serve with some white rice or potatoes, a slice of crusty bread and your favorite glass of Rosé.
