Whipped Ricotta with Honey, Olive Oil, Rosemary & Grilled Baguette

Ingredients:
• 1 cup fresh ricotta cheese
• 1/2 heavy whipping cream
• 2 tablespoons extra-virgin olive oil (plus more for grilling the baguette)
• 1/4 cup honey (or more, to taste)
• 1 tsp lemon zest
• 1 tbsp fresh rosemary, finely chopped
• Sea salt, to taste
• 2 tsp Freshly cracked black pepper
• 1 tsp dried lavender or Herbes de Provence with lavender
• 1 French baguette, sliced into 1/2-inch rounds
Instructions:
1. Prepare the honey:
• Over medium heat on stove, heat the cracked pepper.
• Add honey and lavender or Herbes de Provence with Lavender and stir to warm.
• Once heated through, pour into a dish and set aside or in the refrigerator for up to 2 hours.
2. Prepare the Whipped Ricotta:
• In a mixing bowl, add the ricotta cheese and heavy whipping cream.
• Using a hand mixer or whisk, whip the ricotta until it’s light and fluffy, about 2-3 minutes.
• Season with the lemon zest and stir.
3. Grill the Baguette:
• Heat a grill pan or skillet over medium-high heat.
• Brush both sides of the baguette slices with olive oil.
• Grill the slices for about 1-2 minutes per side, until they’re golden brown and crispy. Remove from heat.
4. Assemble the Dish:
• Place about 2 tbsps of the infused honey into the bottom of a serving bowl.
• Use an ice cream scooper to add the whipped ricotta on top
• Drizzle with a little olive oil.
• Sprinkle with the chopped rosemary and a pinch of sea salt.
• Serve immediately while the baguette is warm.
